Heat oil in a deep pan. Add mustard seeds and let splutter. Lower the flame and add cumin, urad dal, peanuts and dry red chilies and saute until urad dal turns golden brown. Now add ginger, onion and curry leaves and turmeric powder,roast well.
Now add steamed rice, lime water and add salt. Turn off the heat and gently mix all ingredients well without smushing up the rice.
