Lemon rice

    Lemon rice is popular in the whole of south India. It is eaten as is or in combination with chutney, achar or pappad.

    Serves: 2 

    • 1 cup raw rice
    • 4 tablespoons Cooking oil
    • 1 teaspoon mustard seeds
    • 1/2 teaspoon Cumin
    • 1/2 teaspon Urad dal, whole white
    • 1/4 cup Peanuts
    • 3 dry red chilies torn into halves
    • 1/2 teaspoon fine cut ginger
    • 1 small onion, cut small
    • 7-8 Curry leaves
    • 1/2 teaspoon Turmeric powder
    • 1 small lime squeezed into 1/4 glass water
    • Salt to taste

    1. Steam rice. Let cool.
    2. Heat oil in a deep pan. Add mustard seeds and let splutter. Lower the flame and add cumin, urad dal, peanuts and dry red chilies and saute until urad dal turns golden brown. Now add ginger, onion and curry leaves and turmeric powder,roast well.
    3. Now add steamed rice, lime water and add salt. Turn off the heat and gently mix all ingredients well without smushing up the rice.
