Rice With Almonds, Pistachios and Raisins

    This is a very pretty rice dish. Great for parties!

    Serves: 4 

    • 2 cups cooked basmati rice
    • 1 tbsp ghee
    • 1 pinch turmeric
    • 4 onions chopped into flakes
    • 2 tbsp pistachios
    • 2 tbsp sliced almonds
    • 2 tbsp raisins
    • 1/2 tsp sugar
    • 1/2 tsp salt
    • 1 tsp saffron diluted in 1 tsp of water
    • 1 tsp finely chopped coriander for garnish

    1. Heat oil over medium heat in a wide pan. Add turmeric and saute for 30 seconds. Add onions and saute till they get fragrant and change color to brown. Keep 1 tsp cooked onions aside.
    2. Add nuts and raisins to the pan. Cook for 3-5 minutes. Take care to stir often so they don't stick to the bottom. Add sugar and salt.
    3. Add cooked rice and mix well. Sprinkle saffron water on top. Garnish with coriander and or left over onions.
