About this recipe: Kanji has been my favourite drink for Spring since I was a child. Feb-March is when the black carrots come in the markets and the sun also finally starts getting hot enough to ferment this bright purple, tangy drink.

Serves: 4 

  • 10 black carrots chopped length wise
  • 10 glasses Water
  • 2 tsp Rai (mustard seeds)
  • 1 tsp Salt
  • 10 Pepper corns (crushed)

Prep:10min  ›  Extra time:7days fermenting  ›  Ready in:7days10min 

  1. Slice the carrots and put them in a glass jar. Add the remaining ingredients. Cover the jar and keep in bright sunlight for 7 days. Shake the jar daily to let the ingredients blend.
  2. Open after a week. Pour the drink in glasses, adding ice cubes and 2-3 carrot pieces in each glass.
