Green spicy rice

    I learnt this recipe from a friend during the fun college days. Making this dish brings back so many memories.

    Serves: 4 

    • 2 capsicum (bell pepper)
    • 3-4 green chillies
    • 1 bunch coriander leaves
    • 1 teaspoon ajwain
    • 2 garlic cloves (finally chopped)
    • 2 cups rice
    • 1 packet Maggi masala seasoning
    • oil for cooking

    1. Roast the whole capsicum directly on the flame on your stove. Make a paste by mixing the roasted capsicum, green chillies, coriander and ajwain. Set aside for later use.
    2. Heat oil in a pan, add the chopped garlic and the paste. Sauté for a few minutes and add the rice.
    3. Add 4 cups of water to the pan. Cover and cook the rice until done.
