Romanian Cabbage Salad

    A friend brought this lovely salad to our pot luck over the weekend. This is really easy to make and is a classic in Romania.

    Ingredients
    Serves: 4 

    • 1 medium sized fresh, tender cabbage
    • 3 tsp Oil (extra virgin olive oil preferred)
    • Salt
    • A pinch fennel seeds
    • Juice of 1 large lemon

    Directions

    1. Chop the cabbage finely. Choose the youngest, sweetest leaves of the cabbage.
    2. Make dressing: Mix oil, salt, fennel and lemon juice. Let sit for 2-3 minutes to let the flavours mix.
    3. Pour over the salad. Let flavours mix well, about 5 minutes. Serve.

    Used different ingredients. i tried it with a pinch of italian mixed herbs and olive oil and vinegar...it tastes great...  -  31 May 2010
