Mix carrots and ghee. Microwave for 3 minutes. Add sugar. Microwave again for 3 minutes.
Heat a kadhai on medium to high heat. Add carrots. Cook for 5 minutes, till water evaporates. Sprinkle the khoya. Take care to add khoya only when the water has dried up. Mash khoya lightly so chunks of it remain. Add cashews or almonds and raisins.
Continue to cook. In 4-5 minutes, halwa will leave sides of the pot and will be ready to serve hot or cold.
