    This is an appetizer that goes well with puffed rice which is a popular bengali evening snack. The addition of spinach gives it a healthy boost. It can also be eaten with rice and daal.

    Serves: 8 

    • 3 medium potatoes
    • 1 bundle of spinach
    • 1/3 cup peanuts
    • Oil as needed for shallow frying
    • 1/3 cup besan
    • Salt to taste
    • 1 tspn amchur powder
    • 1/2 tspn red chili powder
    • 1 tspn bhanja mashla
    • 2 tbspn rice flour

    1. Boil the potato and mash it up smoothly.
    2. Steam or cook the spinach in the pressure cooker. Do not add water to the spinach as it will release water. Drain any excess water from the cooked spinach and mash it up smoothly.
    3. Roast the peanuts without oil. Get rid of their skins and crush them in halves.
    4. Mix together the mashed potatoes, the cooked & drained spinach and the besan to a smooth dough like texture. The besan will be useful to tighten the dough. Add more if needed. Shape into patties and refrigerate for half an hour.
    5. Add the peanuts, the salt, amchur powder, chilli powder and the bhanja mashla. Mix well. In absence of the bhaja mashla you can add freshly made garam masala.
    6. Shape into patties and refrigerate for half an hour. Sprinkle some rice flour and shallow fry in hot oil till both sides are browned.

    Serving suggestion

    Serve with a hot and sweet sauce.

    Other ideas

    To make bhanja mashla, roast cumin seeds without oil, and crush them in the grinder to make a powder.
