Chocolate Chip Apricot Cookies

About this recipe: Very yummy chocolate chip cookies with the goodness of apricot bits.


Serves: 36 

  • 1 cup + 2 tablespoons (150g) maida
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup (125g) butter, softened
  • 1/2 cup (100g) demerara sugar
  • 1/2 cup (100g) dark brown soft sugar or jaggery
  • 1 egg, lightly beaten
  • 1 1/2 teaspoons vanilla essence
  • 1/4 teaspoon salt
  • 1 cup (170g) chocolate chips
  • 1 cup (130g) chopped dried apricots

  1. Preheat oven to 190 degrees C / 375 degrees F. Grease a baking tray.
  2. Mix the flour and bicarb in a bowl. In a separate bowl, beat together the butter, demerara sugar and brown sugar until fluffy, then beat in the egg, vanilla and salt. Stir the flour and bicarb into the butter mixture. Fold in the chocolate chips and apricots. Drop by rounded teaspoonfuls onto the baking tray.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

Make your own with your favorite chocolate bar. Using a sharp knife, roughly cut chocolate into 1 cm pieces.
