Apple Muffins

    I use this basic muffin recipe for making different, quick and easy fruit muffins. This one is made with chopped apples.

    Serves: 12 

    • 255g plain flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 100g caster sugar
    • 60g butter
    • 225ml milk
    • 110g apple - peeled, cored and chopped

    1. Preheat oven to 200 C. Lightly grease a 12-cup muffin tin, or line with paper muffin cups.
    2. In a large bowl, sift together the flour, baking powder and salt.
    3. In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternately with the milk. Fold in the fruit. Pour batter into prepared muffin tin.
    4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the centre of a muffin comes out clean.

    Made it healthier. I used half wholemeal flour, added a dash of lemon juice (to go with zingy sharp apples) and sprinkled a bit of brown sugar on top. yum!  -  29 Aug 2009  (Review from Allrecipes UK | Ireland)
