Egg Kulambu

    Kulambu is a tamililan spicy stew-like preparation. The main flavours are from tamarind and jaggery or sugar. This is a delicious kulambu using boiled eggs. You can easily use fish or crab instead of the eggs.

    • Ingredients
    • 8 boiled eggs
    • 1 large onion, sliced thin
    • 2 tomatoes (about 1 cup chopped)
    • 6 cloves garlic, minced
    • 1 small piece ginger, minced (about 1 tablespoon)
    • 1 teaspoon red chilli powder
    • 1 teaspoon coriander (dhania) powder
    • ½ teaspoon turmeric (haldi) powder
    • ½ teaspoon tamarind paste
    • ¼ cup grated coconut
    • 2 tablespoons jaggery
    • Salt to taste
    • Chopped coriander leaves for garnish
    • 3 tablespoons oil
    • Masala
    • ½ teaspoon fennel seeds (saunf)
    • ½ teaspoon cumin (jeera) seeds
    • ½ teaspoon black peppercorns

    1. Boil eggs. Cool, peel and set aside.
    2. Dry roast the masala ingredients. Grind into powder.
    3. Heat oil in a large frying pan or kadhai. Make 4 slits in the eggs. Fry the eggs with turmeric powder for 2 minutes. Keep the eggs aside.
    4. Add the onions to the oil and fry till golden brown. Add the ginger and garlic. Then add chopped tomatoes and cook till tomatoes are soft. Add the ground masala powder, red chilli powder, and coriander powder. Fry for a few minutes.
    5. Add 1 cup water and the coconut. Add salt, tamarind and jaggery and boil the gravy for 5 minutes till a little thick. Add boiled eggs and simmer eggs in the gravy for 10 minutes. If the gravy is too thick, thin out with a little water. Garnish with coriander leaves. Serve.
