About this recipe:Kulambu is a tamililan spicy stew-like preparation. The main flavours are from tamarind and jaggery or sugar. This is a delicious kulambu using boiled eggs. You can easily use fish or crab instead of the eggs.
Dry roast the masala ingredients. Grind into powder.
Heat oil in a large frying pan or kadhai. Make 4 slits in the eggs. Fry the eggs with turmeric powder for 2 minutes. Keep the eggs aside.
Add the onions to the oil and fry till golden brown. Add the ginger and garlic. Then add chopped tomatoes and cook till tomatoes are soft. Add the ground masala powder, red chilli powder, and coriander powder. Fry for a few minutes.
Add 1 cup water and the coconut. Add salt, tamarind and jaggery and boil the gravy for 5 minutes till a little thick. Add boiled eggs and simmer eggs in the gravy for 10 minutes. If the gravy is too thick, thin out with a little water. Garnish with coriander leaves. Serve.
