    Pronounced Basil Roo-ee, here's a fantastic summer appetizer- Basil and tomatoes are seasoned with green chilli, garlic and sea salt. Serve with toasted baguette slices or pita wedges.

    Serves: 8 

    • 1 large bunch fresh basil, finely chopped
    • 2 small tomatoes, finely chopped
    • 150g dried breadcrumbs
    • 3 cloves garlic, minced
    • 1 green chilli, seeded and finely chopped
    • 1 teaspoon sea salt
    • 6 to 8 tablespoons olive oil

    1. In a medium bowl, stir together the basil, tomatoes, breadcrumbs, garlic, chilli, sea salt and olive oil. Cover, and refrigerate overnight. Serve with crusty bread, pitta or chips!

    Great Recipe for a dip for parties and for using up all that basil I grew this summer! It is about the consistency of hummus so you might be able to add some chick peas in place of some of the bread crumbs.  -  11 Oct 2008  (Review from Allrecipes US | Canada)
