Beetroot, French Bean and Apple Salad

About this recipe: A brightly coloured salad that is easy and simple to make.

Serves: 4 

  • 225g jarred sliced beetroot, drained and diced
  • 400g most tender french beans, cut into bite sized pieces
  • 1 large apple - peeled, cored and diced (slightly sour variety preferred)
  • 1 teaspoon olive oil
  • 2 tablespoons cider vinegar

  1. Blanch french beans. Combine all ingredients in a medium bowl and toss well. Chill for 1 hour before serving. Serve cold.


Want a fresher version of this salad? Buy fresh beetroot and french beans and boil or steam until tender. Allow to cool, then cut into small pieces and combine with the remaining ingredients before chilling for 1 hour.
