About this recipe:For a variety of garnishes for desserts I really like candied orange, lemon or lime peels. I also use them inside cakes. This recipe can easily be doubled.
100g orange peel, cut into strips
100g caster sugar
4 tablespoons water
Directions Prep:15min › Cook:45min › Ready in:1hr
Place peeled strips in large, wide pan and cover with water. Bring to a boil over high heat, then reduce heat and simmer 10 minutes longer. Drain. Repeat this process two more times.
In a medium pan, heat sugar and water over high heat until boiling. Place peel in sugar mixture, reduce heat and simmer 15 minutes, until sugar is dissolved. Remove peel with slotted spoon and dry on wire rack overnight. Store in airtight container.
