Chicken Moongfali

    This is a quick and easy Chinese style chicken with capsicum, green onions and noodles. The moongfali comes from a sauce made with peanut butter, soy sauce, stock and ginger. Yum!

    Serves: 6 

    • 225g noodles
    • 1 1/2 tablespoons vegetable oil, divided
    • 1 red capsicum, julienned
    • 4 green onions, chopped
    • 60g fresh beansprouts (optional)
    • 500g (2 cups) chicken breasts, cut into cubes
    • 140g smooth peanut butter
    • 2 tablespoons soy sauce
    • 1 teaspoon grated fresh ginger
    • 110ml chicken stock

    1. Cook pasta. Cook red capsicum, green onion and beansprouts in 1 tablespoon oil until tender yet still crunchy. Set aside.
    2. Cook chicken in the same pan, adding remaining oil if needed. When chicken is done and juices run clear, set aside.
    3. Mix peanut butter, soy sauce and ginger in a large pan over medium low heat.
    4. Add chicken stock. Add pasta, cooked vegetables and chicken. Toss to coat all ingredients. Serve immediately.

    After reading the reviews i decided to give the receipe a go, keeping in mind it's peanutty flavour which i love anyway! I did as one suggestion said added garlic, just used veggies from the fridge, ie broccoli, red onion, peppers & spinach. Used water instead of broth, at least 1 cup in the end and a more flatter shaped pasta. Finally it was cooked BBQ'd chicken that went in and the final result i must say was fantastic.     I thoght it was a nice recipe. However a little thick. I recommend adding 1/3 cup coconut milk, an additional 1/4 cup chicken broth and Linguini instead of angel hair. That would make it a 5 star  -  20 May 2006  (Review from Allrecipes US | Canada)


    If you like peanut sauces, this is perfect. I used more garlic & called for, and it turned out beautifully. I also made this a delicious vegetarian dish by eliminating the chicken & using a bag of frozen stir-fry vegetables.
