Spicy Honey Marinade

About this recipe: A luxurious marinade made with honey, mustard and chillies. I love it on mutton, lamb or for meaty kebabs.

Ingredients
Serves: 4 

  • 2 cloves garlic, minced
  • 1 tablespoon grainy mustard
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tsp curry powder (basic recipe: equal parts coriander powder, cumin powder, 1/2 the turmeric, chilli powder to taste)
  • 1 teaspoon chilli paste
  • 1 teaspoon ground turmeric

  1. In a glass bowl, stir together all ingredients. Rub into any cut of lamb, and marinate for at least 3 hours before cooking as desired.
