About this recipe: This chilled summer soup is perfect for summer evenings. Cucumber, onions, capsicums make sure it always looks wonderful.


Serves: 10 

  • 5 large tomatoes, diced
  • 400g Kabuli chane, soaked overnight and boiled, or tinned, drained and rinsed
  • 1 stalk celery, diced
  • 1 cucumber - peeled, seeded and diced
  • 2 green onions, chopped
  • 1/2 red onion, finely chopped
  • small handful chopped fresh parsley
  • 1/2 red capsicum, finely chopped
  • 1/2 yellow capsicum, finely chopped
  • 1/2 lemon, juiced
  • 1 clove garlic, minced
  • 1L tomato juice
  • salt and freshly ground black pepper to taste
  • 1 dash spicy sauce

  1. In a large glass bowl, combine all ingredients. Chill in the refrigerator at least 2 hours before serving.
