    About this recipe: Spinach, cabbage, red capsicum and carrots are sprinkled with a simple dressing and sunflower seeds. This salad is bursting with colour and nutrients! I love it for picnics or when I am in the mood for something healthy.

    Serves: 5 

    • 300g fresh spinach, torn
    • 1/2 medium head cabbage, shredded
    • 2 large carrots, sliced
    • 1 red capsicum, chopped
    • 1 tablespoon balsamic vinegar
    • 2 tablespoons extra virgin olive oil
    • 30g pumpkin or sunflower seeds (optional)
    • salt and freshly ground black pepper to taste

    1. In a large bowl, combine the spinach, cabbage, carrots and red capsicum.
    2. Combine vinegar and oil in a jar, and shake to combine. Pour on the salad and toss to coat. Sprinkle with pumpkin or sunflower seeds and salt and pepper if desired.
