About this recipe: This is my mother's special fried chicken recipe. Chicken marinated in garlic, oyster sauce and curry powder, then pan fried.

    Serves: 4

    • 6 cloves garlic, chopped
    • 4 tablespoons oyster sauce
    • 2 tablespoons curry powder. (Basic recipe: equal parts coriander powder, cumin powder, 1/2 the turmeric and chilli powder to taste)
    • 1 whole chicken, cut into pieces
    • 100ml vegetable oil

    Prep:15min  ›  Cook:25min  ›  Ready in:40min

    1. To marinate: In a glass dish or bowl, combine the garlic, oyster sauce and curry powder. Mix together. Add chicken pieces and turn to coat. Cover dish or bowl and refrigerate to marinate for at least 1/2 an hour.
    2. In a large frying pan, heat oil over medium high heat. Add marinated chicken (disposing of leftover marinade) and fry for 20 to 25 minutes or until chicken is crispy and brown and juices run clear.

This recipe is also good prepared with boneless chicken breasts, marinated overnight and then broiled.  -  14 Jun 2000  (Review from Allrecipes US | Canada)

This is one of the most delicious chicken recipes I've tasted! I used curry powder instead of curry paste, and added some rice and a little more salt to make it a main course meal. Very nice!  -  15 Nov 2001  (Review from Allrecipes US | Canada)
