About this recipe: My kids love it when I sprinkle nuts on top and make this as a birthday surprise or on weekends. You can make the batter the night before to save time. Make in a frying pan or in a waffle iron.

Serves: 8

  • 1 1/2 teaspoons dried active baking yeast
  • 2 tablespoons warm water (45 C)
  • 250g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon caster sugar
  • 1/2 teaspoon salt
  • 3 eggs
  • 450ml buttermilk
  • 2 tablespoons vegetable oil

  1. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  2. In a large bowl, mix together flour, baking powder, bicarbonate of soda, sugar and salt. Make a well in centre. Add yeast mixture, eggs, buttermilk and vegetable oil; stir until smooth.
  3. Pour batter onto a hot frying pan and cook both sides like a dosa. If making waffles, pour batter into a waffle iron. Cook until golden brown, about 3 minutes. Serve hot.
