Morning Pancakes

    My kids love it when I sprinkle nuts on top and make this as a birthday surprise or on weekends. You can make the batter the night before to save time. Make in a frying pan or in a waffle iron.

    Serves: 8 

    • 1 1/2 teaspoons dried active baking yeast
    • 2 tablespoons warm water (45 C)
    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 tablespoon caster sugar
    • 1/2 teaspoon salt
    • 3 eggs
    • 450ml buttermilk
    • 2 tablespoons vegetable oil

    1. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
    2. In a large bowl, mix together flour, baking powder, bicarbonate of soda, sugar and salt. Make a well in centre. Add yeast mixture, eggs, buttermilk and vegetable oil; stir until smooth.
    3. Pour batter onto a hot frying pan and cook both sides like a dosa. If making waffles, pour batter into a waffle iron. Cook until golden brown, about 3 minutes. Serve hot.

    These are fabulous waffles and so quick & easy to make. I altered the recipe a bit by using only 1 1/2 cups of all purpose flour, 1/2 cup of whole wheat flour, 1/2 t. of vanilla extract, 1/2 t. of cinnamon, dash of nutmeg and sprinkled pecans of the batter after pouring it into the iron. My husband raved over these waffles!     THE best waffles we've ever had. EVER. I only made one change and that's using whole wheat white flour. I kept everything else the same (only using organic where I could). I laugh at the eight servings because my boys ate every single waffle I made.
