About this recipe: A truly versatile sponge cake that cheers you up with its yum orange flavour.

  • 3 eggs, separated
  • 200g caster sugar
  • 1 tablespoon orange zest
  • 200g plain flour
  • 2 tsp baking powder
  • 6 tablespoons orange juice

  1. Preheat oven to 160 C. Grease and flour one 23cm (9 in) cake tin.
  2. Beat egg yolks, sugar and orange zest until light and fluffy. Mix flour and baking powder together. Alternately add flour mixture and orange juice to the egg yolk mixture.
  3. In a separate large clean bowl, with a manual egg beater or electric beater, beat egg whites to stiff peaks, and fold into batter.
  4. Pour batter into prepared tin and bake in preheated oven for 50 to 60 minutes.
