About this recipe: This bhurji with basil and cheese will make for a wonderful breakfast or brunch! Eat on top of toast.


Serves: 1 

  • 1 tablespoon vegetable oil
  • 1 egg, lightly beaten
  • 30g grated Cheddar cheese
  • salt and freshly ground black pepper to taste
  • 1/2 teaspoon pesto

  1. Heat oil in a frying pan over medium heat. In a small bowl, combine egg, Cheddar, salt and pepper. Pour into pan, and cook stirring for 3 to 5 minutes, or until desired doneness. Remove from heat, and stir in pesto.
