Roasted Herb Almonds

    Make healthy and delicious almond snacks right at home. They are nothing like the fried, heavy almonds you find at Diwali time. These almonds are coated with garlic, rosemary, coarse salt and olive oil before roasting. Delicious warm or cool, they pair well with olives and feta cheese. If you are using non-roasted almonds, increase the cooking time a little.

    Serves: 8 

    • 275g dry roasted almonds, unsalted
    • 2 tablespoons olive oil
    • 2 cloves garlic, finely chopped
    • 1 sprig fresh rosemary, chopped
    • 1 1/2 teaspoons coarse sea salt (do not use regular table salt)

    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat oven to 180 C.
    2. In a bowl, mix together almonds, olive oil, garlic and rosemary until nuts are completely coated. Season with salt. Spread evenly on a baking tray.
    3. Bake in a preheated oven for 10 minutes.

    This is great. I actually used the almonds oil and kosher salt but instead of the other stuff, I used smoked paparika. They are great.     Don't use fresh rosemary, it tends to burn and shrivel up! The kosher salt may taste better but I found table salt or freshly ground salt sticks to the nuts better than kosher. Very addicting and nibble worthy.  -  29 Mar 2007  (Review from Allrecipes US | Canada)
