About this recipe:
On a BBQ, thyme and rosemary transform veggies into treats! Try these delicious vegetable kebabs either on their own, or paired with your favourite meat kebab.
12 button mushrooms
2 red capsicums, cut into square pieces
1 green capsicum, cut into square pieces
4 tablespoons olive oil
2 tablespoons lemon juice
1 clove garlic, minced
small handful chopped fresh thyme
small handful chopped fresh rosemary
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
- Preheat barbecue for medium heat.
- Thread mushrooms and capsicums alternately on skewers.
- In a small bowl, mix together olive oil, lemon juice, garlic, thyme, rosemary and salt and capsicums. Brush mushrooms and capsicums with mixture.
- Brush cooking grate with oil, and place kebabs on the barbecue. Baste frequently with oil mixture. Cook for about 4 to 6 minutes, or until mushrooms are tender and thoroughly cooked.
