Mashed Potatoes With Pesto

    There's lots you can do to simple, rich mashed potatoes. I've added basil pesto but you can choose sundried tomato, coriander or porcini pesto. The kids just love it! You could also add some sundried tomatoes and top with a little grated Cheddar and black pepper.

    Serves: 4 

    • 4 potatoes (or enough for a side dish for 2 adults and 2 small children)
    • a knob of butter
    • a dash of milk
    • 1 tablespoon of pesto

    Prep:5min  ›  Cook:15min  ›  Extra time:20min cooling  ›  Ready in:40min 

    1. Place the potatoes into a deep pan with enough water to cover. Bring to a boil, and cook until tender; about 10 minutes. Let cool.
    2. Drain, and mash with butter and milk to your desired consistency. Mix in pesto, and serve.

    These were good mashed potatoes; I did have to up the amount of milk some, and then ended up putting in some sour cream too. Served them with Beef, Burgundy Style, Buttery Cooked Carrots, & Zesty Marinated Asparagus, all from this website and it was a very nice combination.     This was another great way to use up our large basil plants. I used olive oil instead of butter and doubled the pesto. I used the 'Simple Garlic and Basil Pesto'recipe from this website.     Pretty yummy! I like the flavor of pesto so I used more of it (3 tablespoons for 2 yukon gold potatoes), and a couple of handfuls of pecorino romano cheese, and a couple of pinches of salt and pepper. Great way to use up extra pesto!  -  08 May 2006  (Review from Allrecipes US | Canada)
