Goan Prawn Pulao

    Scented with cinnamon and elaichi, here's a delicious alternative to regular pulao. The shrimp give the rice a nice pink colour and great flavour. And it's ready in 20 mins!

    Serves: 6 

    • 200 gms Prawns
    • 1 Cup Long grained rice
    • 2 tablespoons Ghee
    • 1 inch piece of cinnamon
    • 2 Bay leaves
    • 6 Cloves
    • 8 Peppercorns
    • 3 Elaichi
    • 1 Onion sliced
    • 1 Tomato chopped
    • 1 teaspoon Garam masala
    • 1/4 cup peas
    • 1/4 cup Carrots cubed
    • 1/4 cup Green beans sliced on a slant
    • 2 Maggi cubes
    • 2 cups Water
    • Corriander leaves for garnish

    1. Peel and wash prawns. Apply salt and set aside.
    2. In a deep vessel, put in the ghee and all the whole spices. When they start to crackle put in the onions and fry till they turn golden brown. Then add the tomatoes, shrimp and the garam masala and fry.
    3. Put in the peas, carrots, green beans, maggi cubes and rice and fry for a little bit. Pour the water in and mix well. Bring to a boil, cover and simmer for 10 minutes. When cooled fluff with a fork and garnish with coriander leaves and lime.
