Aloo Matar Rice (Potatoes and Pea Rice)

    This is a quick fix I make for my daughter when she goes away to college.

    Serves: 3 

    • 1 potato (boiled and cut to pieces)
    • 1/3 cup peas (boiled)
    • 1 onion chopped length wise
    • 1/2 tsp cumin seeds
    • 1/2 tsp rai
    • 2 cups cooked rice (left over)
    • 2 tsp lemon juice
    • 1 green chili
    • 2 - 3 curry patta
    • 2 tsp vegetable oil
    • 1/4 tsp turmeric powder

    Prep:15min  ›  Cook:5min  ›  Extra time:20min preserving  ›  Ready in:40min 

    1. Saute the onions till light brown, add the rest of the ingredients above except for lemon juice.
    2. Add rice and mix well.
    3. Add lemon juice and serve.

    Use next day

    You can have it with plain yoghurt.

    I had leftover rice from Asian takeaway last night. This recipe is perfect for using it up. It's simple to make. I substituted Rogan Josh spice mix instead of that in the recipe.
