Mango Ice Cream Topping

    This is a great tasting sauce to pour on vanilla ice cream. Use the sweetest, juiciest mangoes you can find.

    Serves: 4 

    • 3 cups mangos, peeled, seeded and chopped
    • 1 tablespoon butter
    • 1 tablespoon brown sugar
    • 1 teaspoon lemon juice
    • 1 teaspoon orange juice
    • 3 tablespoons water

    1. In a pan over medium heat, combine the mangoes, butter, brown sugar, lemon juice, orange juice, and water. Stir until the mixture thickens. Remove from heat and serve.

    I was looking for a way to use some mangoes that were ripening faster than I could eat them. This was easy and worked well as a pancake topping. Had no OJ so substituted passion fruit juice for a little more tropical taste.
