Sweet Mango Salsa

    This mango pineapple salsa goes very well as a dip for potato chips or on top of toast. As a side dishes, you can also use it with hearty meat platters.

    Serves: 4 

    • 2 mangoes - peeled, seeded, and chopped
    • 1 cup tinned pineapple, drained
    • 1/4 cup chopped fresh coriander leaves
    • 2 tablespoons peeled and finely chopped fresh ginger
    • 1/2 cup chopped red onion
    • 1/4 cup rice vinegar
    • 1 teaspoon crushed red pepper flakes, or to taste

    1. Combine mango, pineapple, coriander, ginger, red onion, vinegar, and red pepper flakes in a bowl, and stir lightly to mix well.
