Chicken Mango Salad

    This is a healthy and tasty dish for when you want to eat light, fresh, simple food. The mango adds Vit A, avocados are full of heart healthy fats and the non fatty protein from the chicken keeps you full for a long time. Great tasting diet food!

    Serves: 2 

    • 2 tablespoons brown sugar
    • 1/4 cup water
    • 1/3 cup lime juice
    • 1/2 cup chili sauce like Maggi
    • 4 cups shredded, cooked chicken
    • 2 medium mangos - peeled, seeded and diced
    • 2 avocados - peeled, pitted and diced
    • A large bunch salad leaves: spinach, lettuce etc.

    1. Make dressing: In a pan over medium-high heat, stir together the brown sugar and water. Bring to a boil, then pour into a medium bowl. Stir in the garlic chili sauce and lime juice. Set the dressing aside.
    2. In a large bowl, toss together the chicken, mangoes and avocados. Arrange the salad leaves on serving plates, then top with a few spoonfuls of the chicken mixture. Pour dressing over the top.
