About this recipe: Ever had mango 'soup' before? This dish is ready in a flash and is a light, healthy snack for any time hunger. Garnish with strawberries and mint.


Serves: 3 

  • 2 mangoes - peeled, seeded and cubed
  • 1/4 cup sugar
  • 1 lemon, zested and juiced
  • 1 1/2 cups full fat or low fat cream

  1. Place the mango, sugar, lemon juice, lemon zest and half-and-half into a blender or food processor. Cover, and process until smooth and creamy. Serve chilled.
