Aloo Brocooli Paratha

    This is an easy paratha to make just takes a little prep time and is a good way to get some vegetable in your kids.

    Makes: 9 

    • 2 cups wheat flour
    • 1 cup water
    • 2 potatoes
    • 1 cup brocolli finely shredded
    • 1 inch ginger
    • 1 onion (small)
    • 1 tsp red chilli pepper
    • vegetable oil
    • salt to taste

    1. Boil the potatoes in a pressure cooker for 10 mins.
    2. While the potatoes are boiling knead the wheat flour with water and salt.
    3. Roll the wheat flour into medium 9 sized balls and set aside,
    4. Mash the potatoes,add onion ginger,shredded brocolli and red pepper to it.
    5. Roll the above mixture into 9 medium sized balls and set aside as shown in the picture.
    6. Take some white flour in a bowl and lightly dip the wheat ball into it as shown above.
    7. With a rolling pin flatten out the wheat ball a little and place the potatoe and brocolli ball on it (like a pocket) and make it into one ball as shown in the picture.
    8. Lightly dip the ball in the white flour and flatten it out with a rolling pin.
    9. Heat a frying pan for 1 min and place the above paratha on it.
    10. Cook each side for 1 min each. After both sides are done add 1 - 2 drops of oil on both sides and let it cook for 1 more minute. Dab a little butter on top of the paratha.
    11. Serve with plain yoghurt and mango pickle.

    Serving suggestion

    You can make the parathas a few hours ahead and just add the oil before serving.
