    About this recipe: Here's a tasty variation for the classic Italian snack.

    Serves: 8 

    • 170g tinned artichoke hearts, drained and chopped
    • 80g grated Parmesan or Pecorino or Grana Padano cheese
    • 1 small red onion, finely chopped
    • 5 tablespoons mayonnaise
    • 1 French bread baguette, cut into 1cm (.5 in) thick slices

    1. Heat oven to 200 C.
    2. In a medium bowl, mix artichoke hearts, cheese, red onion and mayonnaise. Top baguette slices with equal amounts of the artichoke mixture. Arrange slices in a single layer on a large baking tray.
    3. Bake in the preheated oven until toppings are bubbly and lightly browned.
