Inspired by the famous Spanish cold soup, this is a great pasta salad for summer picnics or easy dinners. It's colourful and tangy with its lime-tomato dressing and hari mirchi.

You'll love this healthy, elegant dish of boiled beetroot tossed with a simple garlic dressing. Garlic lovers can put more than two cloves!

Traditionally favourite flavours of beet and goat cheese blend well in this healthy and yummy salad. It's great for a romantic dinner or anytime easy entertaining. I used canned beets, cut into rounds and ovals. You may use peeled, boiled beets. I hand shaped goat cheese into 'petals'. The salad is in sitting on top of edible, organic roses. Serve with roasted lamb and asparagus.

Vitamin rich Chukander, so good for you and delicious too! Fresh mint makes a delicious contrast to the sweetness of the beetroot.

This is a healthy and tasty dish for when you want to eat light, fresh, simple food. The mango adds Vit A, avocados are full of heart healthy fats and the non fatty protein from the chicken keeps you full for a long time. Great tasting diet food!

Here's a great summer pasta salad for any time munching. Corkscrew pasta is boiled, then tossed with capsicums, limes, mirchi, tomato and chilled for two hours. Also makes a great appetizer for a dinner party.

This is a wonderfully satisfying salad that is just great with tandoori chicken. Fried rice noddles add crunch and everyone, esp kids really like its sweet-sour dressing.
