In SE Asia, there are different kinds of 'noodle soups'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the tender onions as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. Add chopped hot chillies or dried chilli flakes to make the soup spicy.

This hearty soup tastes really special, yet despite its creamy texture it doesn't contain any cream. Made with cooked chicken and fresh sweetcorn and potatoes, with a garnish of bacon, it's substantial enough for a light lunch, served with crusty bread and followed by salad or fruit.
