About this recipe: one of my favourites for snacktime to be made ahead of time and most importantly - its purely vegetarian!

Serves: 6 

  • 1 cup Flour
  • 60 gram unsalted butter, chilled
  • 1 cup Spinach, chopped
  • 1 onion, thinly slilced
  • 1 cup cream
  • 1 tsp salt
  • 50 g cheese, grated
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1 tsp oil
  • 1 tsp garlic, chopped

Prep:20min  ›  Cook:30min  ›  Extra time:30min chilling  ›  Ready in:1hr20min 

  1. add chilled cubed butter to the flour and mix well. add a little chilled water if required. wrap the dough in plastic wrap and keep refrigerated for atleast 30 mins. Pie crust is ready.
  2. heat oil in a wok, add garlic and onions and saute till pink. add chopped spinach and cook till soft.
  3. add salt and herbs and saute. now add 1 tsp flour, cream and grated cheese and mix well. filling is ready.
  4. grease 6 muffin molds with oil and line with the pie crust. fill with the spinach filling and bake in a preheated oven for 30 mins or till browning occurs.
