About this recipe: Pumpkin is very useful for diabetics. It has very low glycemic index. Cinnamon spice is very good for controlling blood sugar.As per studies if a diabetic takes 1/4 teaspoon of cinnamon powder daily twice a day with water regularly, the level of blood sugar may go down up to 30-35% within 3 months. The bay leaves are also helpful in reducing blood sugar level, As per studies, Fenugreek is very much helpful in reducing blood sugar and in controlling blood cholesterol.The vegetable prepared with under mentioned method may prove good for diabetics.

  • 250 gm pumpkin cut in small pieces
  • 2 tomatoes chopped
  • 2 teaspoon sunflower oil
  • 1 small piece of ginger grated
  • 1 green chilli chopped
  • 1/2 teaspoon each of Jeera(cumin),cinnamon powder, fenugreek, powdered garam masala
  • few coriander leaves chopped
  • 1/2 teaspoon each of 2-3 bay leaves,coriander powder, chilli powder, turmeric powder
  • salt as per taste

  1. Cut pumpkin into small pieces. Also chop small pieces of green chilli, ginger and tomatoes. Put 2 teaspoon of oil into a pan and let it heat. Put jeera , fenugreek and bay leaves into the oil till they turn dark brown, then put powdered garam masala. Immediately after putting garam masala, put chopped tomato pieces, green chilli and ginger pieces altogether and stir them. Put red chilly powder, turmeric powder and salt as per taste. Now put pumpkin pieces and keep stirring for some time to mix all. Now place the lid tightly. This vegetable does not take much time, wait for 5-7 minutes & then open the lid. Spray cinnamon powder and coriander leave to garnish. This vegetable is good for diabetics & it is tasty too.
