Unaiza's Fried Egg Over Easy With Curry

    I have never tried this very unique recipe, but my friend, Unaiza, assured that it tastes great! I know some common recipes for frying eggs, but this is the first time I found a recipe for frying eggs over easy with curry. Enjoy!

    Serves: 3 

    • Vegetable oil, as needed, or approximately, less than 1/2 cup
    • 1 cup sliced onions
    • 1 cup chopped tomato cubes
    • 2 pinches of red chilli powder
    • 1/2 teaspoon ginger paste
    • 1 pinch of turmeric powder
    • 1 tablespoon onion paste
    • Salt as needed
    • 2 pinches of cumin powder
    • 2 tablespoon tomato ketcup
    • 3 eggs
    • 3 mint leaves

    1. Heat oil on a pan, add sliced onions and chopped tomatoes and fry until the onions turn slightly brown. Add red chilli powder, ginger paste, turmeric powder, onion paste, salt and cumin powder. Stir and fry for 2-3 minutes.
    2. Add tomato ketchup and stir until gravy forms.
    3. Carefully break the eggs open on to the gravy so that the yolk does not leak out. Allow the eggs to cook on low heat for 5 minutes.Do not turn over the eggs, as the yolks could leak. Sprinkle some salt on the fried eggs. Pour some of the gravy sauce on top of the fried eggs over easy.
    4. Garnish with mint leaves.

    Serving suggestion

    Serve with plain rice or pulao. It does not taste good with paratha.


    Do not use more than 3 mint leaves, or else the eggs will taste bitter.
