    About this recipe: Raita is a kind of cucumber salad that is eaten with Pulao and all kinds of Biryanis. It is really light and must be made right before the rice is served.

    Ingredients
    Serves: 4 

    • 1 big cucumber
    • 1-1.5 cup sour yoghurt ( tok doi)
    • Salt as needed
    • 1 teaspoon of sugar
    • A paste of 8-10 green chillies
    • 1 tablespoon of coriander leaves paste
    • 1 tablespoon of mint leaves paste

    1. Peel the skin of the cucumber. Chop it into thin small slices, approximately as long as French fries.
    2. Mix the sliced cucumber with yoghurt, salt, sugar, green chilli, coriander and mint leaves paste slightly. If it is mixed too quickly or too much, then water will come out of the cucumber and ruin the taste.

    Tip

    Make right before the food is being served, or else the water will come out.
