About this recipe: This is a quick and easy fry that can be served with plain white rice as a side dish.

Serves: 4 

  • 2 eggplants
  • 1 cup of vegetable oil
  • 2 bay leaves
  • 4-5 green chilies, sliced in half along the length
  • 1/2 teaspoon of turmeric powder
  • Salt as needed
  • 1/2 teaspoon of cumin paste
  • 2 cinnamon sticks
  • 1 egg

  1. Boil the eggplants and mash into a paste.
  2. Heat a pan with oil and add the bay leaves, green chilies, mashed eggplant, turmeric powder, salt, cumin paste and cinnamon sticks. Stir and mix well all the ingredients.
  3. Beat an egg well in a bowl and pour it in to the pan with the eggplant very slowly, while continuously stirring the mixture.
  4. The dish will be ready when the egg and eggplant have mixed well with the spices to form a thick fried mixture.
  5. Serve with rice.
