Heat a pan with oil and fry the onions and bay leaves.
Add the turmeric, cumin and red chili powder and stir. Also add salt, ginger, garlic and onion pastes, cardamoms, cinnamon and garam masala powder
Continue stirring and 1 cup of water.
Cook until the water dries up and the oil starts to simmer on top.
Add the cubed beef liver and mix well with the spices. Cook for 30 minutes with 1-2 cups of water.
Add the potatoes and 2 cups of water when the liver cubes have boiled a bit. Cook with lid on for 10 minutes for 10 minutes. When the potatoes have become boiled, turn the heat down and put the lid on and cook for 10 minutes. By now the water should dry up and oil should be floating on top.
