Snake Gourd and Shrimps Fry (Chichinga chingri bhaji)

    This is a light and easy dish with snake gour (chichinga) and chingri (shrimps). It is an everyday dish, and is served with rice for lunch. However, the leftovers of this can be used for breakfast with plain tortillas or parathas.

    Serves: 3 

    • 1 tablespoon soya bean oil
    • 1/2 cup of onion slices
    • 1 cup of shrimps
    • salt as needed
    • 1/2 teaspoon of turmeric powder
    • 1/2 teaspoon of red chili powder
    • 1 teaspoon of ginger paste
    • 1 teaspoon of garlic paste
    • water as needed
    • 500g of snake gourd, peeled and thinly sliced
    • 1 handful coriander leaves
    • 4-5 green chilies, sliced in half along the length

    1. Heat oil in a frying pan and fry the onions for a bit. Add the shrimps and fry until the onions and shrimps turn slightly brown.
    2. Sprinkle the salt, turmeric and red chili powders, ginger and garlic pastes and stir.
    3. Add 1 cup of water and cook until the water dries up and the oil starts to float on top.
    4. Add the chichinga slices and some of the green chilies. Cook with lid on for 10-15 minutes
    5. Sprinkle coriander leaves and green chilies.
