Narikel Chira (Coconut-Flattened rice)

    This is a traditional subcontinental sweet snack served in afternoons with warm tea.

    Ingredients

    • 1/2 cup of sugar 1 cup of coconut flesh sliced into long finger length strips
    • Water as needed
    • 1 cup of coconut flesh sliced into long finger length strips
    • 1/2 teaspoon of powdered cardamom

    Directions

    1. Heat a pan and melt the sugar with just a bit of water.
    2. Add the coconut slices to the molten sugar. Stir well.
    3. Sprinkle the cardamom powder and stir again
    4. When the water dries up, pour the mixture on a bowl.
    5. Serve!
