Begunee is a deep fried eggplant that is usually eaten as part of Iftar during the month of Ramadan. It is crunchy and not at all spicy. It is served with ketchup or with other Iftar items such as, chola bhaji, dal er bora and puffed rice.

    • 3 tablespoons of besan (gramflour)
    • Water as needed
    • Salt as needed
    • 1/2 teaspoon of turmeric powder
    • 1 teaspoon of ginger paste
    • Just a pinch of garlic paste
    • 1/2 teaspoon of red chili powder
    • 1 medium sized eggplant
    • 1-2 cups of oil for deep frying


    1. Mix the besan with water. Also add salt, turmeric powder, ginger and garlic pastes and red chili powder. Mix well.
    2. Cut the eggplant out into thick round slices.
    3. Heat a pan with oil for deep frying.
    4. Dip each eggplant slice in the besan mixture and deep until the eggplant turns golden brown.
    5. Serve hot for Iftar.
