    About this recipe: These 3 layered semolina barfis of different colors look and taste great, especially when made for parties. Usually pastel colors are used pink, blue and yellow are used. The barfis are also quite easy to make and are delicious by themselves.

    Ingredients

    • 1 cup of semolina
    • 1 cup of milk powder
    • 3 cups of sugar
    • 4 eggs
    • 2 cups of water
    • 1/4 teaspoon of cardamom powder
    • 1/4 teaspoon of cinnamon powder
    • 1 tablespoon of ghee
    • 1 tablespoon of grated or chopped nuts like almond, chestnuts or pistachios
    • 1 tablespoon of raisins
    • 3 food colorings-just a few drops each

    Directions

    1. Toast the semolina in a tawa.
    2. Blend all the ingredients except for ghee, nuts, raisins and food coloring in a blender.
    3. Divide the blended mixture in to 3 equal portions.
    4. Grease a pan with ghee and pour in 1/3 of the portion. Mix in any food coloring, such as pink. Cook until bubbles form and a thick layer forms.
    5. Repeat for the rest of the 2 portions, each 2 different colors, like light green and yellow.
    6. Pour the first portion of the cooked semolina in a greased dish to make one layer.
    7. Add a second layer with the second portion. Add a final layer with the remaining last portion.
    8. Sprinkle grated nuts and raisins.
    9. Allow the semolina to dry and harden for a bit. Cut into small pieces.
    10. Serve with paratha or loochi.
