Fruit Cake

About this recipe: This is a very common form of dry cake that can be found in any store. It is delicious for the dried raisins, ash gourd morobbas and nuts.

Ingredients

  • 2 eggs (big sized)
  • 3/4 cup of sugar, grinded into a fine powder
  • 1/4 cup of milk
  • 1/4 cup of milk
  • 1.25 cups of sifted flour
  • 1.5 teaspoons of baking powder, sifted
  • 4 drops of vanilla essence
  • 1/2 cup of raisins
  • 1/2 cup of ash gourd morobba
  • 1/2 cup sun dried cranberries
  • 1/2 cup of cashew nuts
  • 1/2 cup dried apricots, chopped
  • Zest of one lemon, chopped coarsely

Directions

  1. Beat the eggs in a bowl using an eggbeater.
  2. Add sugar and continue to beat.
  3. Add the milk and beat again.
  4. Pour the cooking oil and beat just for a bit.
  5. Add the sifted flour and baking powder a little at a time in circular motion from the edge of the bowl and continue to beat.
  6. Finally add the vanilla essence and beat well. (The more the batter is beater, the softer the cake will be).

  8. Mix the dried fruits and nuts together in the cake batter.
  9. Preheat the baking oven for 10 minutes at 180 degree Celsius.
  10. Grease a baking pan with butter or ghee.

  13. Serve when chilled.
