About this recipe:Lobongo means "cloves", and this special sweet snack has rather a romantic name, "Lobongo Lotika". The cloves bring in wonderful flavor to this deep fried snack. It is delicious by itself. However, do leave out the cloves when you are eating the snack!
In a bowl, mix in flour and salt. Add 2 tablespoons of the soybean oil and 1/2 cup of water, a little at a time while working with the flour. Mix and kneed into dough.
Take a lump and roll it out into a small tortilla.
Put in 2-3 tablespoons of a small portion of the grated coconut on the center of the tortilla.
Now take one edge of the tortilla and bring it to the center. Take another edge from the opposite corner or diagonal and bring it to the center such that it overlaps the previously placed edge. Repeat to make 1-2 more folds so that the grated coconut is wrapped up.
Bring the ends of the edges together so that the wrap does not fall opp.
Pin the folds with the cloves.
Repeat to make a few more lobondo lotika.
Heat a deep frying pan with soybean oil. Deep fry until the lobongo lotika turn golden brown.
