Beef bhuna with tomato sauce is of course spicy, but it also has the sweet and sourness of the tomato sauce. It tastes great when served with freshly sliced onions and green chilies. Enjoy with rice, pulao, biryani or parathas.
Set aside 1-2 tablespoons of onion slices in a bowl.
Wash the beef cubes and drain the water out. Snapshot of bef cubes, oil and onion slices.
Blend the tomato slices in a blender. Collect the tomato extract through a sieve. You can pour in 1/2 cup of water, a little at a time through the blended tomatoes and press or squeeze with hand so that the extract is comes easily.
Heat a pan with oil. Fry the onion slices with cardamoms, cinnamon sticks, cloves, bay leaves, ginger, garlic and onion pastes. Stir and sprinkle the turmeric, red chili and coriander powders and salt. Mix and pour in 2 cups of water.
Cook until the water dries up to form a thick gravy, with oil simmering on top.
Add the beef cubes and cook with lid on for 15 minutes until water dries up and oil simmers on top. Repeat 2 times with 2 cups of water each time.
Add the tomato sauce and tomato extract, stir and cook until the water dries up and oil simmers on top.
Sprinkle sugar and cook with lid on for another 30 minutes until the beef cubes become tender and soft and a thick gravy has formed.
