Kachki fish kofta

    This is a special kind of kofta that is stuffed with tiny fishes called "kachki". The koftas are slightly spicy, and taste great with steaming pulao or fried rice.

    • 1/2 kg of kachki fish
    • 1/2 teaspoon of turmeric powder
    • 1/2 teaspoon of red chili powder
    • Salt as needed
    • 1 cup of onion slices
    • 2-3 tablespoons of soybean oil
    • 1 tablespoon of ginger paste
    • 1 tablespoon of onion paste
    • 1 tablespoon of garlic paste
    • 2 tomatoes, sliced
    • 1-2 tablespoons of coriander leaves, chopped
    • 4-5 green chilies
    • 4-5 kumro pata ( pumpkin leaves)

    2. Snapshot of powdered spices, green chilies, coriander leaves and salt.
    3. Snapshot of onion and tomato slices.
    4. Snapshot of frozen onion, ginger and garlic pastes.
    5. Mix all the ingredients together, excluding the oil, tomatoes, ginger, onion and garlic pastes and a bit of the coriander leaves and green chilies.
    6. Heat a pan with 1 tablespoon of soybean oil. Add the mixture and stir.
    7. Add the ginger, onion and garlic pastes.
    8. Add the tomatoes. Stir. Cook on low heat for 15 minutes.
    9. Sprinkle the remaining green chilies and coriander leaves. Set aside.
    10. Spread the washed pumpkin leaves. Place a small portion ( around 1-2 tablespoons) of the cooked mixture on to each leaf.
    11. Now fold from one corner.
    12. Fold again from another corner.
    13. A cone shape will be form.
    14. Fold in the open edge as well and pin with a tooth pick.
    15. Repeat to make 3-4 bodas ( boras)
    16. Heat a pan with soybean oil. Fry the bodas on low heat for 10-15 minutes until the color of the leaves darken and the leaves look wilted.
    17. Serve with rice.
