Stuffed okra

    This recipe is a great way to prepare okra or lady's fingers. The taste of the soft interior of the okra is greatly enhanced when you add crushed peanuts, red chilli and coriander powders. Serve with paratha.

    Serves: 3 

    • 1 cup crushed peanuts
    • 2 teaspoons red chili powder
    • 1 teaspoon haldi powder
    • 2 teaspoons chopped coriander
    • 2 teaspoons cumin powder
    • 2 tablespoons dhaniya powder (coriander powder)
    • salt as needed
    • 6 to 7 bhindi (okra)
    • 3 tablespoons vegetable oil

    1. To make the filling- Mix the crushed peanuts, red chili powder, haldi powder, chopped coriander leaves, cumin powder, dhaniya powder and salt all together in a bowl. Set aside.
    2. From the center of the okras, cut longitudinally all the way down until 1-2 inches off from the bottom of the okras. Repeat to make 4 petal like slits that open up the inside of the okra. Do make sure that you do not cut the entire slit off. Now take some of the filling, and stuff the inside of the okra. Close the slits and tie a thin thread around to prevent the filling to come out.
    3. Grease a hot tawa and toast each of the stuffed okras.
