Anda Fry

    This is a coconut based anda (egg) fry. Serve with rice, pulav or chapattis.

    Serves: 5 

    • 1 chopped onion
    • 3 tablespoons grated dry coconut
    • ½ teaspoon ginger garlic paste
    • As preferred coriander leaves
    • ½ teaspoon cumin seeds
    • 2 tablespoons vegetable oil
    • ½ teaspoon haldi powder
    • 1 teaspoon red chilly powder
    • 3 oil greased hard boiled eggs
    • as needed salt

    1. Mix chopped onions, dry coconut, ginger garlic paste, coriander and cumin seeds together in a bowl and make a smooth paste of it.
    2. Heat a pan with oil, add this paste and fry it for 5 minutes. Add haldi, and red chilly powders and mix well.
    3. Cut the hard boiled eggs in half, and add to pan with the spice mixture.
    4. Cook for 5 minutes and serve with chopped coriander leaves.
